Fallin’ for some Oatmeal



Feeling extra fall this morning with the crisp air, perfect day for oatmeal. This is a great breakfast utilizing pantry ingredients. Misfits Market is where I love to stock up not only on great organic produce, but also on all my favorite Bobs Red Mill products. In this batch of oatmeal; we used thick cut, which needs a little more cooking time, but worth it in flavor. If you do not have thick cut, use what you have on hand, just adjust the cooking time ((Quick cooking oats may only need 3-4 minutes cooking time))

Breakfast is from two of my favorites Aldi and Misfits - where you can find both affordable and organic products. You do not have to over pay for healthy food, there are ways to save money and still eat well!

Feelin Fall’ Pear and Apple Oatmeal

Ingredients

  • 1 Pear ((large)) chopped

  • 1 Apple chopped

  • 1 tsp Coconut oil

  • ¼ cup Water

  • 3 Dates pitted and chopped

  • 1 cup Bobs Red Mill gluten free thick cut Oats

  • 2 cup non-dairy milk

  • 1 tsp Pumpkin spice

  • ½ tsp Cinnamon

  • 1 tsp vanilla extract

Directions

  • Turn Instapot on the sauté function

  • Add oil and the chopped fruit sauté until it starts to brown

  • Sprinkle with Pumpkin spice and cinnamon

  • Add the water to deglaze the bottom of the pan

  • Add the rest of the ingredients to the pot

  • Seal the lid and pressure cook for 15 minutes

  • Let the pressure naturally release ((If you can wait that long its worth it, if not back away and release pressure))

Oatmeal is such a versatile breakfast with so many possibilities just by switching up just a few ingredients. Try any or all of these flavor combinations

  • Banana Chocolate Chip

  • Blueberry Maple ((I like to bake this one and add a crumble topping)) Banana Coconut ((topping with toasted coconut and mini chocolate chips)) Pumpkin Maple ((Another flavor great for a crumble topping))

  • Honey Peach

  • Banana Double Chocolate Chip
