These little bites of goodness are loaded with fall flavors; and are so good- you won’t be able to eat just one. Using coconut sugar and oat flour – these muffins are not only delicious, but a great healthy alternative to store bought and bakery options. Double the recipe, freeze half, and have a healthy snack at your fingertips. ((Almost the entire batch of these were eaten the day they were made))
These are the perfect recipe to make if you have an abundance of apples like us! We hit up one of our favorite local orchards recently and love creating new recipes to use up our bounty.
Ingredients:
· 1 ¾ Cup Oat Flour ((I use Anthony’s Goods Oat Flour it’s organic and gluten-free))
· 2 tsp Cinnamon
· 2 tsp Baking Powder
· ½ tsp Baking Soda
· ½ tsp Salt
· ¼ tsp Nutmeg
· ½ Cup Coconut Oil, melted and slightly cooled ((or Browned Butter- stick to coconut oil if dairy free))
· ½ Cup Applesauce ((Homemade** is amazing, but unsweetened store bought will work))
· ½ Cup Coconut Sugar ((Also using Anthony’s Goods))
· 2 Tbl Molasses
· 2 Eggs
· 1 tsp Vanilla
· 1 Cup Apples – Grated ((Fuji, Gala, Pink Lady, Granny Smith – something sweet and crisp))
((Make sure you grate those apples; they cook more evenly than chopped apples – especially if you're making these mini.))
Crumb Topping Ingredients:
· ⅔ Cup Oat Flour
· ⅓ Cup Coconut Sugar
· 1 tsp Cinnamon
· ⅛ tsp Nutmeg
· ¼ Cup Coconut Oil ((or butter))
Maple Cream Cheese Glaze: Not shown here – but delicious
· 2 Ounces Cream Cheese
· 2 Tbl Maple Syrup
· 2 Tbl Milk of Choice
· 1 tsp Vanilla
Directions:
· Preheat oven to 400°
· Line a mini muffin pan with paper liners
· Add dry ingredients to a big bowl, and whisk
· Add wet ingredients to a separate bowl and mix
· Add the wet ingredients into the dry and gently fold. You do not want to over mix the batter
· In a separate bowl, mix the crumb topping ingredients together
· Fill the muffin cups fully and press some crumb topping on each
· Bake 14-17 minutes ((If using full size muffins bake 22-27 minutes))
· While the muffins are baking, whisk together the glaze ingredients, drizzle once completely cooled.
Homemade Applesauce:
· 4-6 Apples - peeled and roughly chopped
· ½ tsp Cinnamon
· ¼ Cup Water
· Add ingredients to an instapot and cook for 5 minutes. Let the pressure naturally release.
· Store leftovers in a glass jar for up to a week.
