Grainy Granola & Blueberry Jam

Granola (done right) is a great snack. Filled with protein and fiber, this can be eaten by itself. However, add it to the top of yogurt or jam toast, and you have yourself a full meal. It's naturally vegan and gluten-free.

Ingredients:


·  4 Cups     Favorite Nut & Seed Mix ((Add a larger amount of nuts, and about 1/4 C of each of the Hemp & Chia seeds))

  I used Cashews, Pecans, Pistachio, Pumpkin, Sunflower, Hemp & Chia Seeds

·  3 Tbl         Coconut Oil

·  1/4 Cup   Maple or Date Syrup

·  2 Tbl         Date , Coconut, or Cane Sugar

·  2 tsp         Pumpkin Pie Spice

·  1 tsp         Vanilla Powder

·  1 tsp         Salt

Directions:


·  Preheat oven to 315°F

·  Mix nuts and seeds in a large bowl

·  Melt coconut oil and maple syrup together

·  Add in vanilla and spice mix

·  Add in salt and sugar.

·  Stir to combine, and let set 5-10 minutes

·  Add to parchment lined sheet pan and bake 20 minutes. DO NOT STIR MIXTURE. If you want clumpy pieces, leave as is

·  Turn heat up to 325°F and bake for an additional 10 minutes. Turn off the oven and let it cool with the door cracked open

Ingredients:

·      2 Cups Blueberries

·      2 Tbl   Chia Seeds

·      ¼ Cup     Water


Optional:

Cinnamon, Honey, Lemon Juice


Directions:

·      Fill a pot with frozen blueberries

·      Fully submerge the berries with water, bring to a boil, then turn the heat down to simmer for 20-30 minutes. ((I added two cinnamon sticks to my batch.))

·     These berries were on the sweeter side, so I did not add any sugar to my jam while cooking. However, when it was finished, I added some fresh local honey for the added benefits. ((If the berries are on the tarter side, add 2-3 tbsp of sweetener when simmering.))

·      Chia seeds can get messy- once they are wet the stick to everything. To contain the mess, add Chia seeds to the jar you will be storing your jam in ((Personally I like to use glass jars, if using plastic, mix the seeds in the pan)). Add in half the blueberry mixture and stir. Once cooled, mix in the second half of the blueberry mixture. Stir, and cool. Store in the fridge for 3-4 weeks.
